Thread: How to Prepare Kolhapuri Masala

    hi guys

    i want to prepare Mutton Kolhapuri Recipe at home. I need ingredient Kolhapuri Masala. I don't know how to prepare this. Please tell me how to make Kolhapuri Masala

    I must say, to make the authentic Kolhapuri Masala, one requires damn lot of patience. Here i have given the recipe. Wish you all the very best.

    Ingredients

    125 gm Dried Coconut
    250 gm Red Chilli Powder
    60 gm Coriander Seeds
    50 gm Garlic
    50 gm Sesame Seeds
    25 gm Poppy Seeds
    20 gm Cumin Seeds
    10 gm Peppercorns
    5 gm Asafoetida
    8 Inches Cinnamon
    5 gm Mace
    2 Inches Turmeric
    1 Piece Ginger
    2 tsp Cardamom powder
    1 tsp Fenugreek seeds
    1 Bunch Coriander Leaves
    1 tsp Mustard Seeds
    1 tsp Dagad Phool
    10 Cloves
    4 Bay Leaves
    1/8 Nutmeg
    1/2 Cup Refined Oil
    2 Cassia Buds
    Salt to taste

    Method
    • Grind garlic, ginger and coriander together to make a fine paste.
    • Roast poppy and sesame seeds on a hot griddle and grind it to make a fine paste.
    • Now roast the dry coconut and grind it properly.
    • Fry all the other ingredients separately in a little oil, except salt.
    • Grind the fried ingredients one by one.
    • Take a big bowl and combine all the ground ingredients.
    • Add chili powder and salt to it and mix well.
    • Kolhapuri Masala is ready. Store the masala in an air-tight jar.

    ms ritu this recipe that u have given is wrong
    this is for the preparation of a single dish that is mutton or chicke kolhapuri
    tha person is asking about kolhapuri masala(regular in use) that is ghati masala
    i ll give u the recipe after few days

    I can every time demand Kolhapuri Mutton, Kolhapuri Chicken, very famous dish in Maharashtra it's dish is very spicy.

    Even I love the authentic Kolhapuri masala. Here is the recipe for this delicious dish.
    Ingredients
    • Dry red Chillies-1 cup
    • Grated dry coconut-1/2
    • Cumin seeds-1 tbsp
    • Coriander seeds-1tbsp
    • Sesame seeds-2 tbsp
    • Mustard seeds-1tsp
    • Black pepper-1 tbsp
    • Fenugreek seeds-1 tbsp
    • Cloves-1tsp
    • Oil-1 tsp
    • Bay leaves-2
    • Red chilli powder-2tbsp
    • Nutmeg powder-1/4 tsp
    Method
    • Take a pan and heat oil, add all the spices except nutmeg and red chilli powder and roast well
    • Once you get the aroma of roasted spices, switch off the stove
    • Once the spices cool down grind it adding red chilli powder and nutmeg

    For The Paste

    1/4 cup grated Dry Coconut
    5 Clove Garlic
    4 to 5 whole dry Kashmiri red chillies ,
    25 mm (1") piece ginger
    1 tbsp poppy seeds (khus-khus)
    1 tbsp sesame seeds (til)

    Other Ingredients

    1 cup Onion
    2 tbsp oil
    1/2 cup finely chopped Tomatoes
    salt to taste
    For the paste:
    • Add the ingredients and use mixer and blend them well and make a smooth paste add some water to it and set them aside.

    • In a pan heat oil add onions and deep fry it. Now add the paste and sautι them well for about 5minutes.

    • It’s time to add salt and tomatoes and cook for about 7minutes, and you can also use 1/4 cup of dry coconut I mean a dry coconut.

    As Kolhapur city is near Maharashtra corner, its fame and popularity has climbed. Even making Kolhapuri Masala isn't that hard. It can be done by:
    Need to take:
    • Red chillies, nutmeg powder, dry coconut, black pepper and sesame seeds
    • Some mustard, coriander and cumin seeds
    • Bay leaves, oil, fenugreek seeds and cloves
    Put spices with nutmeg powder. Thereafter, drizzle oil after mixing all spices well. Roast that all. When mustard seeds crackle, cumin-coriander seeds will change to red color. Do transfer all that to plate. Grind that much when it cools, and add chilli powder+nutmeg. Do store this in dry place

    To savor this exclusive and authentic dish of India you need to have certain essential ingredients like coconut and Nutmeg powder to produce perfect Kolhapuri masala. You can prepare it in the following manner like:

    Ingredients:

    • 100 gm Grated Dry Coconut
    • 1 tsp Nutmeg Powder
    • 100 gm Dry Red Chillies
    • 10 gm Coriander Seeds
    • 20 gm Cumin Seeds
    • 10 gm Mustard Seeds
    • 40 gm Sesame Seeds
    • Black Pepper (as per requirement)
    • 5 gm Fenugreek Seeds
    • Cloves (as per requirement)
    • 10 ml Oil
    • 3 Bay Leaves
    • 15 gm Red Chili Powder

    Preparation:

    • To a medium heat stove place a pan and pour the oil.
    • Shift the other ingredients except for the nutmeg and red chili powder.
    • Stir fry for a minute till it produces smell.
    • Remove the pan from the stove and allow it to cool.
    • To a blender shift it along with the red chili powder and nutmeg.
    • Blend it finely before serving it instantly.
